Bitter leaf soup, best referred to as “Ofe Onugbu,” in Igbo, is a signature meal for the people of  Southeast Nigeria. It’s a traditional Nigerian Igbo dish cherished for its unique flavour and nutritional/medicinal properties.

The soup is made with a combination of bitter leaf, cocoyam, meat, fish, crayfish, and assorted spices that give it a distinctive taste.

– Cow head (meat)/goat meat

– Palm oil

– Do not use curry or thyme when cooking your proteins

– Boil the cocoyam until tender, peel off the back and pound till you get a smooth paste

– You can also purée the cocoyam with a blender; just add warm water when blending to form a smooth paste

– It is traditional to sun-dry the leaves before washing to achieve a particular consistency

– Wash the bitter leaf several times to eradicate at least 90% of its bitterness

– Alternatively, you can boil the bitter leaf to get the same result

– Blend the uziza seeds along with the dried shrimps and fresh pepper
